BBQ: Sauce or Method?

Barbeque is a summer-time staple in Texas.   When in Texas, a barbeque is not a barbeque without the proper meat.  Rooted to the cattle industry during the taming of the west beef is a pit-master favorite.

A popular outdoor cooking method whether in the back yard, on the beach, or in a park consists of meats slapped onto a flaming grill and smoked to perfection.  But when it comes to the delish in the dish, masters of the pit can agree lip smacking, sauce-drippin', real Texas barbeque is in the technique, the rub, and most certainly, the sauce:
